This is a great book, but it's not even 300 pages and as you said is an "easy" read. The OP has a long plane ride. She'll be done with this book before the plane takes off.
I love Ken Follet books for plane rides, but I also have loved all of the Kristen Hannah books I've read so I don't think we have similar tastes.
How about
Long Bright River by Liz Moore. It's a crime thriller for people who don't like that genre. For sure a "can't put down" type.
