I'm making some this evening and did not think to use canned tomatoes. I normally use fresh from my garden, but having a bad tomato year so I bought some instead. I like to use a mandolin to get the veggies thin. Layer them like in the movie. It is beautiful! I Also like to add a little cheese to the sauce for depth of flavor.

Roast the non-onion/garlic vegetables in the oven before you add them into the stew. It make a huge difference and keeps it from being too watery.

Does anyone know the way to make delicious ratatouille? I’ve tried a few times and it’s fine but not great. Any experts out there?
