No vinegar? I would prepare everything and add goat cheese table side. I like to salt and drain the cucumber beforehand to pull some water out and keep things crunchy. But I also like lots of acid and less oil on cucumber, so you may be going for a different style.

That sounds good! I agree about chopping and preparing the dressing but not combining.
