Melt butter, add onion and ¼ cup water. Cover and simmer 5 minutes. Add 4 cups water and corn. Bring to a boil, lower heat & simmer another 5 minutes.
Puree in batches in a blender a fill 3 minutes. Press through a coarse sieve. Season with salt & pepper and reheat. I like to add a little garlic butter.
Sounds delicious and not fattening like many chapters with cream.
