Quesabirria (also called birria tacos or red tacos) ("cheese birria") is a Mexican dish comprising birria-style cooked beef folded into a tortilla with melted cheese and served with a side of broth (Spanish: consomé) for dipping.

Enjoy — birria is delicious! For what it’s worth, everyone in my family prefers the tacos to the quesadillas. The cheese doesn’t add anything.

No, I have seen them made on social media, YouTube and elsewhere, so that's how I know it's a trendy item. I see photos of them on the Google listing for the restaurant; as in, patrons published photos of their meals on Google reviews. They look delicious! And I've never tried them before. They are not on their menu, at least their menu I can find online, so that's why I wanted to know what to ask for.

The au jus for dipping is called consomé broth, which is a cup of the broth from the simmering meat, with onions and cilantro added.

We're on vacation and this Mexican restaurant has a photo of this item on their Google listing but I can't find it on their small menu. It almost looks like a folded meat and cheese quesadilla? But the color on the tortilla looks like broth is used to grill it too. What is the broth on the side called? They have a quesadilla on their menu but no mention of that broth on the side. We are order dinner to-go later and unsure how to properly ask for this. I know I've seen it on instagram and tiktok, so I think it's a trendy item.
