My favorite thing to buy is art from local artists. Usually they are painting/ sketching like 100 copies of a particular tourist trap per day, but I don't care. I pick up one or two from each trip and bring them home and have them matted and framed. It brings back nice memories when I walk around my house. You can find these pretty much anywhere in Europe.
I was going to say the same about street artists (but also now I wish I had a spanish moto jacket, although I did once buy a leather jacket in Florence…)

I got an authentic Icelandic sweater. It wasn’t cheap by any means, and before I went, I swore I wouldn’t buy one as in general I don’t wear a lot of sweaters but omg, I love it. I got a ton of wear out of it this past winter.

-Venchi chocolates (Italy)
-Marvis toothpaste (Italy)
-Bertozzi woodblock printed dishtowels and linens (Italy)
-Nutella (Italy -- less sweet than the US versions!)
-Aged balsamic vinegar tradizionale (Modena, Italy)
-Maxmara coats (Italy, half the price as buying in the US)
-Diptyque products (France, usually pick this up at airport)
-Macarons from Pierre Herme or Maison du Chocolat (France -- usually get these as gifts)

I always buy books by local authors (in translation), chocolates (gianduia in Italy, truffles in Belgium, etc.), spices, leather goods in Florence, coffee, scarves in Italy, local jewelry (love Czech Republic for this--the museum of decorative arts in Prague sells gorgeous Art Nouveau style stuff, and there are lots of cool contemporary designers, too.), locally made soaps, salts, olive oil, cookbooks, etc.

Always something for the kitchen or house. We have lots of pottery and decorative pillows. We have a Crepe pan from France and cork products from Portugal.
Also food and drinks. Limoncello with tiny cups from Italy, olive oil from Greece. I bring lots of ziplock bags to pack any bottles. Like someone else said, spices and spice blends.
I also always buy shoes. All of my shoes are from Europe. They’re typically more expensive though.

In Italy, we loved Pratesi Leather goods in Cortona. Unique items, great quality and selection. Cortona and Pienza had great shops.
