My DD studied for six months in Rome last year and I was fortunate to visit her several times. On my last night there on one of my trips, we went to Ad Hoc. We had a fabulous tasting menu focused on truffles, paired with wonderful wines. The ambience, food and service were all top-notch. And compared to tasting menus elsewhere, it was very reasonably priced. Here's a link:

They have two locations and since we booked last minute, we got into their newest one in Circo Massimo, and it was wonderful. A month or so later, the owner sent me a thank-you email, with an electronic cookbook. Really sweet level of service and DD and I look back on it with fond memories as a really fun mother-daughter night out.
Book ahead especially if you're there in the summer.
