I've tried a couple times to read the first Stephanie Plum book but just can't get into it. I do, though, really like Evanovich's Fox and O'Hare series!

No, they are not specifically "spy thrillers". Although the protagonist often does some spying, it is generally spying on people in her own home town.
The books are crime novels with a lot of humor.

i wouldn’t characterize them as funny, but the Mrs. Pollifax series is on the lighter side. Mrs. Pollifax is a grandmother who decides one day that she’d like to be a spy, so she goes to the CIA and volunteers. The books were written during the cold war, so they’re somewhat dated, but still delightful.

I have read all 8 Mick Herron Slow Horses books now, plus the novellas and I'm in a deficit.
Any suggestions?
