Some of the beef dishes in our house:
Tacos, of course, which are great because you everyone can adjust which items they go heavy on, easy to make lots of meat at once and freeze, and also easy to make some fish for those who want that option.
Meatballs and sauce. In our house, this is a meal without pasta. I make a big batch of homemade meatballs and sauce, and everyone has a bowl of that alongside some garlic bread and salad. Leftovers get frozen and eaten as meatball subs later.
Homemade sloppy joes are a favorite. My recipe:
1 lb ground beef, browned and drained
1/2 cup diced green pepper
1 1/2 cups diced celery
1 1/2 cups diced onion
1 can Campbells tomato soup (the old fashioned ‘Andy Warhol’ can kind, no water added, just the can contents)
2 tsp vinegar
1 tsp mustard
1 1/2 tsp worchestershire sauce
1 tsp salt
Combine all ingredients, bring to boil and simmer, partly covered, for 1 hour
(I always double the recipe and freeze, and going heavy on the meat and veggies is fine— there is a lot of liquid. For example, I recently made it and had 2.5 lbs of ground beef, and adjusted the veggies up to keep the ratio the same, and still plenty saucy with two cans of tomato soup).

OP, we have the same parameters as you except I'm the one who can't eat fish so that is not happening. Also we don't eat pork, beef.

You can get really creative with turkey.

-Turkey meatballs (swedish style, noodles and peas for kids). Just peas for dad.

- I make pepperless stuffed peppers since nobody eats the peppers! Make a crust with refried beans and flour, then the spanish rice/turkey/vegetable mixture on top. Add cheese. Everyone will eat that without complaint.

- My kid won't eat beans but he's doing well with lentils because they are "tiny beans". Less mushy with that mouthfeel that they seem to hate. Lentil/Turkey soup works. use Turkey sausage. Wegmans has a good one. Add in whatever vegetables you can get away with.

also, you should eat fish regularly to expose them even if that means they get a sandwich or grilled cheese or leftover that night. smell, IMO, is one of the biggest hurdles to seafood for most kids.

I use the Skinnytaste Fast & Slow Cookbook all the time. She has lots of great recipes. Favorites are a turkey meatloaf that has lots of chopped mushrooms inside as a "binder" - I promise kids will not notice! I even double the mushrooms she calls for and it keeps the meatloaf nice and moist. I also cook it in the oven for 45 minutes rather than putting it in the slow cooker as she calls for. There's also a thai lettuce wrap recipe that uses ground chicken. I serve it over rice (no lettuce wrap) for my kids and they go nuts. You could use cauli rice instead for adults or a 50-50 mix.

If you want to ease your kids into eating fish, I make mine salmon and prepare a "glaze" of equal parts brown sugar and dijon (maybe a tblspn of each divided between four filets). I know, it's sugar... but its not a ton and a little goes a long way.

We do a ground turkey fry up. With ground turkey, onions, carrots, peas and chopped zucchini thrown in. Kids have it with rice. And dh and i have it with salad and some parm on top. We also try for lower carb for parents so we never make a carb central meal like only pasta with sauce. Its always pasta/rice/cous cous on the side. Dh and i have a big side salad or lentils while kids have the carb with their protein.
Im lucky my oldest is 7 and loves crunchy salad with vinegar and salt.

The above recipe is so good! I add in a bell pepper and an onion (both thinly sliced) plus an extra egg.

Perhaps you should eliminate simple carbs and load up on complex carbs. You might get better results that way.

Your husband can avoid the pita and rice stuffed grape leaves; eat the meat and make himself a hearty salad with whatever vegetables he likes. Keep offering different veggies and dips and see what you can get the kids to enjoy!

Once a week we do “bowl night” and my kids love it.

Pick a theme - taco, Asian, Greek, Italian… whatever
Make a salad dressing that goes with that theme. Then lay out:

Some type of whole grain
Lentils or beans (for those who will eat it)
Meat cooked per theme (any type)
Lots of different types of chopped vegetables - 3-4 things + greens
Something fun or crunchy - cheese, hummus, almonds, craisins, tortilla strips, canned mandarins

Let everyone make their own bowl.

I'd work on fish for the kids. Even if you have to start them with fish sticks. Can you do cauliflower rice?
