*Dining reservations are 60 days out and you can get reservations for your entire Disney stay (if you don't change resorts) on the 60th day before your arrival.
*Food and Wine tends to encourage obnoxious drinkers, especially on weekend evenings, so plan accordingly.
* Holiday decorations go up about the second week in November, and it's beautiful in the parks, resorts, and Disney Springs. They are all on slightly different schedules.
*The Mickey's Very Merry Christmas Parties start in mid-November. They go late, so you will want to sleep in that morning if you go and probably NOT buy a park ticket for that day. Instead, you can get in with the party ticket beginning at 4PM. The holiday fireworks are AMAZING.

Things get very pretty crowded on Thanksgiving, but early November is fine, and you’re good planning and booking for it now given you’re not going at peak time.

You’re fine to plan early November now. Disney world is crowded most of the time, and you’ll be there for the tail end of Epcot food and wine festival and the beginning of holiday season, so I don’t think the crowds will be that low, but you should have a nice time.

You should be fine to book now and all you really need to do is watch some youtube videos on Genie + and also there's a Facebook group called Disney Tips and Tricks that's helpful. Just follow that and watch some videos and you'll be fine. Especially in November, it's not that big a deal.

It's not too late, and it's the perfect time to reserve an onsite DVC villa for early November by renting points through Davids (https://dvcrequest.com) or the DVC store (https://dvcrentalstore.com/guests/availability/?gclid=EAIaIQobChMI6Mqz_eW4_gIVDPvjBx35OgM7EAAYASAAEgJbfPD_BwE). I know you said you don't have to stay onsite, but it would greatly enhance your trip and the villas give you a lot more space. The only catch is you need to get CFAR trip insurance because these are not refundable. You could also book a room directly through Disney if you don't feel you need the space. The refund policy will be more flexible, but it's different if you get a "package" vs room only. Since you have tickets, you would probably want room only.
You do have some things to get updated on, but it's certainly doable by November. And usually the weather is great then (a rare November hurricane notwithstanding).

We are thinking of taking our kids, 8 and 6, to Disney sometime in the next year.
First of all, is it too late to plan this for fall 2023? We don't need to have 'the ultimate Disney experience' or anything...I mean we don't need to stay on property, my kids are not even that into any Disney stuff and don't particularly care to meet characters so we don't need to schedule a character meal or anything like that...we're pretty low key people.
Second, is beginning of November (like first week of Nov) a good time to go? I know there are crowd calendars and whatnot but I thought I'd ask here first and see if others had recent experience with going that time of year.
You may think why are you going if you're not that into it? Well, we bought tickets and had planned to go April 2020 when our kids were 5 and 3 and really into a lot of Disney stuff and then the pandemic happened, Disney was closed, we couldn't go and then we didn't want to go in 2021 still due to the pandemic and in 2022 we moved and had family health issues so now finally we're ready to use our tickets. They don't give refunds so we still have the same amount of money we originally spent on the theme park tickets just sitting there waiting to be used!
