Never heard of it but it sounds delicious. Brown cow plain is yummy yogurt, maybe try that one?

No, don't use flavored yogurt! You don't need to use French yogurt.
Any yogurt will work, but make sure it is full fat. And plain, not vanilla or otherwise flavored. You want the tanginess of the yogurt to shine through.

If I want to make this in the states, can I use the Oui yoghurt - vanilla? Other suggestions?
