If it’s just kids wanting carbs I don’t worry about the food coordinating. Trader Joe’s has these cute mini baguettes in the frozen section and I keep those on hand for situations like this. Regular rice like PP suggested is a good idea too.

OP can't you make one with cauliflower rice and one with real rice?

It's not really twice the work as you would have to chop up everything anyway. A lot of high heat and stirring but not that hard to have 2 pans going at the same time.

I'd want something that contrasted the white fluffy aspects of the "rice". So, not rice or mashed potatoes.

But, cubed and roasted sweet potatoes would work. Or red lentil pasta with olive oil and salt. Maybe black beans with scallion and diced red pepper.

If just your family and you only need to make sure the kids have enough calories and umph in their meal, it's fine to not worry about color/texture and just toast them some good bread with butter or melted cheese.

For a quick weeknight, it's the meal. Fried rice, with a lots of eggs, and maybe some left over chicken or shrimps, and a mix of other vegetables.

Except we have a family member who needs low carb, and kids who need carbs.
