Exposure to air or moisture can change the color of ground beef. Was it unwrapped for thawing? How many days was it thawing in the fridge? The color wouldn't worry me. Hard to know about the smell, if it's normal and you are just sensitive and concerned.

If there’s a smell I don’t use it. Heat kills bacteria but does not remove toxins.

Thawed some ground beef in the fridge, intended to use it yesterday but didn’t. Today when I took it out, the beef was brown/gray on the outside, with a slight smell (but I am overly sensitive to these things). Inside is completely pink. Use or toss?
