I don't, at least not anymore. I think it started that way (the school included it in their list of return-to-school "best practices" to limit the spread), but once it was in practice the teachers/admin realized that it keeps things calmer and they prefer it, which is why it didn't go away when they removed the other restrictions. The kids are tired of it, of course. I wish they would at least give them the opportunity to rotate the seating assignments a couple times a year.
Many teachers do rotate them? Did you ask your DCs teacher?

Yes, my kid hates it. I remember having fun talking to my friends at lunch. He has no such memories (started elementary during COVID).

Our ES assigns each class a group of tables, but does not assign specific seats. I like that it creates some order without forcing kids to sit next to a particular kid who they may not like for whatever reason.

This. I do lunch duty and behavior is atrocious. Assigned seats helps a lot. Kids don't have table manners anymore.

+1, the cause may be girl drama, boys acting silly, reported bullying, etc.

I had a teacher in elementary school that did that. One of the girls at the table was what was called the "R" word in those days. She was placed in our class because her brother was in the class. She was 13 and we were 10. She had very poor communication skills. I'd like to think that I was placed at the table because the teacher thought I was a nice person--but, I don't think that was the reason.

Is it normal to have assigned seats at lunch? I thought it was for COVID but they never gave it up. Curious if other elementary schools do this? Kid doesn’t like lunch because can’t talk to friends.
