I never thought about this before but that’s a good point. We don’t keep olive oil or vinegar in the refrigerator, we do we put homemade salad dressing in there? It doesn’t have anything perishable in it.
If you are chopping up garlic, shallots, fresh herbs and putting it in there or using fresh lemon juice, then I wouldn’t keep it at room temp for days. If it is just oil, vinegar, dried herbs then it is probably ok.
