Be careful with this, if you re-use one of those plastic salad dressing squeeze bottles - especially if you have a high powered microwave oven - they can easily deform the bottles due to melting. I've changed to 15 microwave second bursts with a few seconds between, to keep those bottles intact.

If you are chopping up garlic, shallots, fresh herbs and putting it in there or using fresh lemon juice, then I wouldn’t keep it at room temp for days. If it is just oil, vinegar, dried herbs then it is probably ok.

This happens every single time I make dressing so I am surprised you are surprised.

Like PPs said, it’s totally fine. I usually just take my jar out when I start dinner prep so it’s ready when I am ready to dress the salad. NBD.

And if you are in a hurry, you cat float the dressing container in a bowl of hot water for a few minutes to hasten the thaw.

It’s because it doesn’t have stabilizers and emulsifiers added like store bought ones. Just leave it out for a few minutes, shake to re-emulsify, and use.

+1. It happens sometimes, no big deal, just take it out in advance. I do that anyway even if not solidified because I don't like putting cold dressing on salad.

I've made dressing many times before, and they didn't solidify in the fridge. This one was just white balsamic, dijon and EVOO. I assume the EVOO was the culprit. although it was the same brand I've bought many times before that didn't turn to sludge.

Do you keep homemade dressings at room temp? Or take them out of the fridge awhile before serving?
