You start with a little. And eat some every other day to get your body used to them.
I love different variations of a chicken tortilla soup. Chicken, broth, taco seasoning and lots of Mexican seasonings, corn, black beans, onion, tomatoes, jalapeños. I even add 1/2 cup of shredded cheese at the end and avocado for garnish.
Borscht (use canned or vacuum packed beets for speed)
Matzo ball
Curried cauliflower
Tomato veggie with tortellini
Miso broth with silken tofu and green onions
Broccoli cheddar (use frozen broccoli)
Turkey and split peas
Mushroom barley
One of my very simple faves is to simmer chicken broth with frozen chopped spinach (and orzo or rice if you want). Drop in an egg and stir. Then add a little lemon juice.
Anything with lentils or canned beans will be quick. I like a white bean and kale soup, carrots/chickpeas/tahini, the Washington post corn and coconut soup with chili crisp (use reduced-fat coconut milk; it still tastes great), and sweet potato/peanut butter soup.
On another thread someone said they like soup for a filling low calorie meal and it reminded me that I do really enjoy making a big batch of soup for the week. I often make some variety of black bean soup which is extremely satiating. I’ve also made red lentil soup/dal. Any others that ideally don’t take hours of prep?
