I use olive oil for searing/pan frying. Avocado or coconut oil for baking. Also, occasionally grassfed butter.

As PPs said, seed oils (which is almost every other oil) are damaging.

I think it is a pantry requirement for baking.

I also keep avocado and EVOO in my pantry. Cooking requires different oils.

I bake with butter and use avocado or olive oil for cooking. We don't use vege oil at all so don't keep it in our pantry.

Avocado oil.
Get it from Costco because there are a lot of fake avocado oils.

You need some fat that works at high heat as a kitchen staple. Olive oil is healthy, but does not work well at high temperatures due to the low smoking temp.

So, typically vegetable oil, canola oil or corn oil is the staple. But grapeseed oil is a healthier oil that works at high heat, so you could substitute that.
