Persia / Iran were included in classes I took on the Middle East in College. It was basically North Africa in the West to the Indian border in the East.

Diana Abu-Jaber

Not sure if you are looking for fantasy, but if so, then S.A Chakraborty's City of Brass is excellent.

Why Middle Eastern?

I’ve loved everything I’ve read by Abdulrazak Gurnah. If you’re looking for quality literature, themes of colonialism, slavery, aging Islamic cultures, you will find it here. But he is Tanzanian, from Zanzibar. If you liked Orham Pamuk and Naghiub Mahfouz, you will want to add Gurnah to your list.

I really liked the Golem and the Jinni - it is part Jewish and part Arabic folklore.
