I went to cooking school. We used carbon steel for everything -- except eggs. On "egg day" (when we were tested on more than two dozen ways of cooking eggs) the teflon omelette pans came out.

You have to use a lot of butter on a steel pan when making eggs. It’s so annoying. And it’s still a chore to clean after.

We don’t cook with non-stick, don’t store food in plastic, and never put plastic steam bags or takeout containers in the microwave. It’s not a question of wealth, but awareness. We’ve had the same Pyrex, stainless, and cast iron for over 15 years.

It’s not a matter of wealth. We used to have a pet bird and the gases nonstick pans emit can kill birds over time. So none of that at home. My father has been using the same set of non stick pans for decades. The non stick surface is completely worn, presumably he has ingested a good part of it. He’s 85 and very healthy.

I am not wealthy and use only cast-iron and stainless steel pans- the exceptions are my Crockpot and Dutch Oven and Wok, which are used once weekly total. Also we use a stoneware veggie steamer for veggies.

Health-conscious people, not wealthy people. You confuse education with money with health awareness, OP.

Yes, we're doctors and scientist, and we limit the use of non-stick in our house. We have a parrot too. Bird lungs are very susceptible to toxins in the air - one of the things that can kill a bird are fumes from damaged polytetrafluoroethylene coating.

We use carbon steel pans and porcelain enameled cast iron for saute and dutch oven. Stainless steel for pots. But not for the reason you state.

We have a trust TFAL pan we use to cook our scrambled eggs.

We have anonized and stainless pans for other things.
