3 c mixed flours, 1 1/4cwarm liquids (milk or water), 2 tbs fat, 1 tsp salt, 1 tbs sugar, half a packet yeast. This will give a slow rise, which develops better flavor. Sugar is technically optional.
Knead 5-7 minutes, rest until doubled. Shape. Rise again. Bake until 190 degrees on the inside.
Add ingredients in this order. Use French bread setting.
After baking I let it set for 24 hours on counter on top of few spoons so bottom doesn't get wet, and it's easier to slice
1 cup water
1.5 tablespoon olive or avocado oil
3 cups bread flour
3/4 tablespoon sugar
1 1/8 teaspoon salt
1.5 teaspoon instant yeast - make 2 shallow well, then pour in.
