Do you have access to an old (and I mean old; early 1950s or before, before industrial products changed how many people cook) church cookbook? That would be the type of place to have what you want.

So All Recipes, probably.

You could make ganache. It's smooth and creamy and easy to make.

I’d try a coconut cream or peanut butter filling. You can ball and refrigerate filing first then dip in chocolate. To do smooth creamy filling you’d need chocolate molds. That will be much more work.

Omg that is so ambitious. I would just melt chocolate into heart molds and drizzle with nuts, white chocolate, etc. Or make a giant rum ball. Or make those chocolate buckeye candies.

Hi. I am interested in making homemade chocolates (like See’s Milk Chocolate Buttercream) for my husband for Valentine’s Day. I would like to make the cooked filling. Does anyone have a recipe that does not have cream cheese? I do not want it to be gritty, that’s why I want to cook it. Does anyone have a recipe for smooth candy filling?
