I wanted to love these but they're missing something. The only change I made was the sauce - I didn't have Sriracha so I used a sweet chili sauce and it didn't work at all. I made it with sesame tofu so I used that sauce instead and it worked. But the pancake itself was still missing something. Maybe regular onions? Garlic?

Ooh, I don't know if my kids would eat them but I would! And I could just buy a bag of coleslaw mix. Would these do ok baked though or would they have to be fried?

DP: I’ve made these many times, and they are delicious. I’ve pan fried them in a nonstick pan with a little oil. I’ve never tried baking them. I’d guess that the texture might turn out closer to a frittata if you bake them, but that’s just a guess.

In a bowl, put chopped - veggies, cilantro, mint, peppers, ginger, salt, pinch of baking soda, chickpeas flour (besan) and mix to a slightly thicker than pancake consistency. Then scoop out a tablespn full at a time and fry it in hot oil. Serve with ketchip.

If you mix the mixture to pancake consistency, you can make pancakes out of it too.

Search fritter on Smitten Kitchen. I've done a few types and they were all good. My kids are more likely to eat fritters if there is cheese as an ingredient.

You buy the Korean pancake jeon mix at HMart. I usually add onion, pepper and kimchi.

Look into Korean and Japanese “pancakes.” I make them smaller so they are more like fritters. They’re made with a mix of veggies. Sometimes I add squid or shrimp.

I like making veggie patties to keep on hand for quick lunches and snacks . Even the kids eat some of them, making it an easy way to get some veggies into them. But I make the same couple over and over again and looking to branch out.


Any good recipes for a fritter/patty (technically is it a fritter if I usually bake/broil?). Veggie, bean, quinoa...need some new combinations!
