Ten-plus years ago, Starbucks had a cookie that went through several iterations. It was an apricot oatmeal breakfast cookie. I think that vanilla was in the name at one point too. Also energy.

It was an oatmeal cookie with walnuts, apricots, possibly coconut, and possibly dates.

I can’t get the texture right. It was a little thick and chewy. I found the ingredients online at some point, but failed to save them and can’t find them now.
