DH brought home several pheasants and a few smaller chukars from a day hunting with a buddy. I’m trying to figure out the best ways to prepare them. Unfortunately he got them skinned, so that rules out roasting. So far, I’m taking the two larger pheasants and making a coq au vin style dish. Any other ideas or preparations would be appreciated. Thanks!
