Black beans, diced tomatoes, corn, Mexican spices with brown rice. I also add corn but some don’t want the starch/carb component.
Any kind of pasta mixed with pesto. Including zucchini noodles.
Egg salad, using an avocado instead of mayo.
Sautéed asparagus, tomatoes and onions with quinoa, pasta, eggs. Sometime I’ll very lightly sauté or steam the asparagus, then mix it with the tomatoes and onions, and marinate it with red wine vinegar for 24 hours.

Annie’s brand lentil/veggie soup, drain slightly and serve over rice. Black bean nachos. I’m the same PP as above. I really don’t like cooking so anything in 10 mins or less is a win. We all like Trader Joe’s beefless beef crumbles too, put in red sauce and serve with whatever pasta I like.. we do like a baked ziti type dish with this once a week or so.
Black bean quesadillas are one of our favs. I use WG tortillas. We have tomatoes and avacado/guacamole on the side.

One of my goals this year is to alternate vegetarian and meat meals. What are your favorite easy vegetarian meals? Below are what I have so far.
For context, I have kids, two of whom are in early elementary. Tofu is my youngest’s favorite food, so I’d especially appreciate tofu suggestions!
