I bought three pounds of salmon yesterday, but our Christmas dinner numbers have dwindled (thanks, Covid!), and we will probably only have 4-5 salmon eaters. What are my options? (BTW, I’m the vegetarian who makes salmon for Christmas—from another thread—so I’m out of my depths here.)
(1) Cook it all—will it work for leftovers? Or is there anything it can be turned into the next day once it’s already been cooked? (Incidentally, our microwave isn’t working at the moment, so we wouldn’t be reheating in the microwave. I’ve seen all the internet memes about fish in the breakroom microwave.)
(2) Cook half of it another day this week—I bought it Saturday morning. When do I have to cook it by?
(3) Freeze half. It was “fresh but previously frozen” from the fish counter at Whole Foods. Does that mean I can’t refreeze it?
