For others who are planning salmon, I would love to hear about what you're pairing it with.

I'm planning:
Kale salad with sliced almonds and balsamic
Mashed red potatoes
Roasted asparagus
And we will have stuffing, gravy, and cranberry sauce, even if they stick out against the rest of the menu

I'm the vegetarian above, and we are having:

Spinach-artichoke dip in a bread bowl
Fresh sourdough and crudite
Salmon roasted in parchment with garlic and lemons
Creamy dill-horseradish sauce
Veggie tart (probably squash, onion, gruyere)
Au gratin potatoes
Mashed root veggies (rutabaga, etc)
Roasted Brussels sprouts and/or green beans
Fruit salad
Cookies
Peppermint cheesecake
Mincemeat pie

Hmm. Not sure your opinion is needed here. The OP wants salmon suggestions. Maybe you misread the post?

OP here. This made me laugh. Thanks PP!

I've got a recipe for goat cheese and sweet potato coulibiac that sounds, and looks, nice. But then I'm a fan of salmon coulibiac. My mom used to make it and cut out the pastry in the shape of a fish.

If you're making a salmon risotto, you could make a wild mushroom one.

I think salmon pairs well with risotto.

I agree with this person. Depending on how the salmon is flavoured, a nice saffron or Parmesan risotto works well.

We are getting a side of salmon at Costco. It's not something you can buy in advance unfortunately.

I think a side of salmon will serve 8-10 assuming there are generous side dishes. But check the weights - you probably want one that is at least 2.5-3 lbs.

I'm a vegetarian--so no expert at all--but I typically make salmon for Christmas. In my experience, a "side of salmon" typically only feeds about 4 people. I seem to recall reading that a portion of salmon is around 4 ounces.

In your case, I would get two, and roast them both in parchment paper, and then put them on a serving tray side by side.

I always just buy it from the fish counter at Whole Foods on Christmas Eve.

I buy a giant fillet from Costco. They are always in stock.

Thanks in advance for any thoughts!

Sounds delicious and healthy. I’m not quite sure how far in advance, but I would get on it ASAP! Let us know how it turns out
