Basically a starch and a green vegetable. Potatoes and green beans are popular for a reason.

Mashed potatoes and your favorite vegetable. In the winter I prefer brussels sprouts and in the spring would choose asparagus, but any vegetable works. If you like green beans, somewhere years ago I had a recipe for green beans with some sauteed diced red bell pepper in it so you had that Christmas red and green effect.

Just what I was going to say. I’d do the green beans with toasted almond slivers, and either cheesy potatoes, macaroni and cheese, or popovers. Apple pie for dessert, or pears, apples and cheese.

Mashed potatoes and carrots are my go to for that. I am also not a fancy person. Oh, and some rolls or bread.
