I love Indian vegetarian dishes - so many to choose from and I don't miss meat at all. I agree with a PP who said just nothing with imitation ingredients.

Spinach lasagna, stuffed shells, tortellini, etc.
sweet potato black bean chili
grilled cheese and tomato soup

We are definitely omnivores, but we have quite a few vegetarian dinners in our rotation and I don't even think of them as veggie.

Pretty much any type of cooked greens. We started swapping out the smoked turkey neck for vegan “bacon” so my oldest could eat them, too.

I could eat rajma dal, aloo gobi, and palak paneer every week.

I also really like miso soup with a poached egg.

For vegetarian "main dishes" which is what I assume you were curious about...
Tofu, mostly in Asian cuisine
Bean dishes
Agree that eggplant/mushroom dishes can be satisfying, avocado, some squash meals...

What I do NOT like, as a "flexitarian," are "fake meat" dishes--no vegan chicken, tofurky, pretend bacon, thank you v much. With the recent exception of Beyond burgers, I want my tofu and veggies to stay... tofu and veggies!

All varieties of pasta with tomato or mushroom sauces
Halloumi and chick pea tray bake with spinach
Potato, onion and spinach frittata

By the way, this thread is for everyone. I just wrote "omnivores" because I'm particularly curious about the foods that people who aren't vegetarian prefer.
