Or you could look for a cookbook focused on a specific ingredient that is common in vegan cooking. We have a very good cookbook focused on tofu; some of the recipes are not vegetarian but I learned a ton about tofu from the book,
Moosewood is good because she'll often explain how to make a vegetarian recipe vegan.
And it has such a great vibe.
