Silicone cupcake liners
Silicone baking mats
Immersion blender
Good knives, and probably more important, a good knife sharpener that I know how to use

Metal fish spatula. This is probably my most frequently used utensil.
The parchment paper cake pan liners that are cut in the exact shape/size for cake pan

Potato ricer. I don't know why anyone would try to make mashed potatoes any other way. No mixer, masher, or fork will come close to the ease and efficiency of a ricer.

Not the exact set I have (because I picked them up years ago at Homegoods or similar), but we use these ramkekins a ton:
They're about 4 oz and we use them for baking prep, on charcuterie boards for nuts or olives, all kinds of stuff. Had no idea when I picked them up how often they'd come in handy.

I’m looking for ideas for Christmas gifts. Specifically, I’d like ideas for baking and cooking items that have made a huge difference for you.
For me, those items would be parchment paper (I grew up greasing), microplane graters and zesters, and silicone cupcake/muffin pans.
