For protein, I snack on nuts, like tofu ( especially fried tofu snacks), and eat eggs in some form a few times a week. I also like lentils and hummus, so, maybe hummus and chips and veggies could add some protein.

Also try to incorporate tofu, tempeh, seitanbeans and lentils into your diet. For soft spreada, ble cheeses, silken tofu based spreads can be delicious and also high in protein. Eggs are also a good source.
