Because of the pasteurization process, the eggwhite loses its flavor and doesn't taste very good.
You can see it in other products such as Coconut water as well. Vita Coco coconut water is pasteurized while Harmless Harvest coconut water is not. That's why Harmless harvest coconut water taste so much better than Vita Coco.
It tastes and cooks exactly the same to me. Sometimes I’ll have a egg whites from eggs if I needed a yolk and I’ll cook the carton stuff right besides the white just cracked and I cannot tell the difference
