We blend ripe bananas into the pancake mix and then add chocolate chips.
You can also freeze the bananas and make “nice cream”.

banana pancakes-
1.5 cups flour
salt sprinkle
some cinnamon if you want
some vanillia if you want
1 egg
2-3 mashed bananas
add water or milk if you need it- runny batter makes thinner pancakes

If you have leftover mashed potatoes it's the same recipe less vanilla and cinnamon. Sub potatoes for bananas. Use whatver spray in the pan - I prefer butter.

OP - IDK about you but the day before TG is not the day I want to add another baking project. Depending on your kids, how about tortilla + peanut butter + banana? Roll up, you can eat like a burrito or slice like sushi. My kids love this, it’s quick and easy, and creates a minimum of dishes to be washed

Yes. Make the pancake batter as normal. Mash up the bananas in a separate bowl. You'll see that they are similar consistency. Mix them together and cook them. You will get more pancakes than you expect because of the banana addition.

Mash them and add to oatmeal with lots of brown sugar. Banana pancakes. Banana bread (assuming you have basic baking staples on hand).

Add mashed bananas to oatmeal--especially good with peanut butter stirred in!

Or yes, you can mash them up and add them to the pancake batter.

Or freeze the bananas and make them into "nice cream" or smoothies to serve with the pancakes.

Banana muffins or bread or pancakes like PP said. Over ripe bananas are the best kind for baking, so anything batter that includes banana would work

Cleaning shop before all the cooking begins. I’d love to make a little special breakfast for my kids and wondering if I can use these ripe bananas. I have the just add water-type pancake mix and old fashioned oats. Anything come to mind? If not I’ll freeze them for a later date. Thanks!
