You may not specifically NEED a vegetarian main, but it is kind of nice to have a special holiday centerpiece item. I love the mushroom Wellington from NYT. I don’t want to get accused of being a shill for the Times though…she has a great YouTube video walking you through the steps and the the filling can be made a day ahead. You just wrap it up in puff pastry and bake the day of.

The kids have talked the adults into fried chicken and macaroni and cheese instead of turkey, so we'll have buttermilk fried oyster mushrooms, and some vegan gnudi with butternut squash and cranberries for the vegan, and people who want more traditional Thanksgiving flavors.
