Interesting recipe that seems to basically be a turkey breast stuffed with a somewhat adventurous (but delicious looking) dressing. It’s mostly presentation. You need to gauge your audience. If there are a lot of kids and/or seniors, it probably won’t go over well. With 12 people, you might consider two turkey breasts, one plain and two stuffings, one boring.

Any picky eaters in your family? I’ve known people who either didn’t like onions, or did but avoid them because of indigestion, people who wouldn’t want the sausage because it was too spicy and/or they were trying to eat low-fat, stuffing would be a problem for anyone doing keto or with gluten issues, some people might not want fruit in a main dish, etc.
It looks like it could be delicious, but if you have seniors who are set in their ways or have medical issues, kids who are aren’t adventurous, or adults who are dieting, having a complex dish might not be well received. If everything is served separately, then it’s easier for guests to avoid whatever they don’t like.

With you…I think it tastes better. Thinking of doing the roulades and drumsticks, and an excellent smoked ham my family loves for my crowd of 12.

Cons: many people are very adamant about what they like to see on a tgiving table and a turkey is one of them. Turkey roulade is likely to upset some.
