Most of my meals are like this. Weds night we had Annie’s lentil/veggie soup with baguette bread. Last night DD and I had black bean quesadillas with avacado and tomato. Tonight we had salmon marinated in pesto under the broiler. With 3 min rice and steam in the bag broccoli. My spouse works evenings so most nights it’s me and DD.

I tell my kids to figure it out themselves. Eat whatever they want that's healthy. By age 6 they could put together something simple. Maybe they needed me to cut something or pour boiling water out.

This is a lot of weeknights!

Ravioli is pretty popular in my house.
Quesadillas with whatever's in the fridge.
Breakfast for dinner (eggs, toast, fruit).

We keep leftovers of big batch meals in the freezer for easy reheating. I think we have dal, chicken tikka kebabs, chicken tinga for tacos, and arroz con pollo right now. Plus frozen dumplings and chicken nuggets....

Tater tots
Frozen meatballs
Frozen lasagna

Basically anything from the freezer. Since I had kids, I’m super on top of having a full freezer. I freeze leftovers too.

If I don’t have time even to boil water, then quesadillas. I add refried beans from a can and spinach from a bag, which I usually have. That plus some fruit and we’re done.

Also delivery.

Open-faced tuna melts, tomato soup from a can

Veggie “chicken” nuggets and oven fries, salad

Refrigerator-section ravioli or tortellini, jarred sauce, salad

Cavatappi with jarred light Alfredo sauce with frozen peas mixed in, asparagus

Make-your-own pizzas, salad
