Chicken taco soup

Big can of crushed tomatoes
Big can of diced tomatoes
Can of drained corn
1 can dark red kidney beans, 1 can light red kidney beans, drained and rinsed
Diced onion if you like it; diced fresh green peppers if you like them (you can sautee first or put in raw)
1 bottle of beer, or about a cup of any stock you may have around (chicken or vegetable)
3 chicken breasts
1 packet of taco seasoning, or some Lawrey’s seasoned salt, or at least salt/pepper/paprika, a little heat from Tabasco or chili pepper flakes if you like them

Let it all cook on medium all day on the crock pot. Right when you get home, shred the chicken with forks and put it back in the crock pot. As it finishes, bake corn bread. Or you can serve it with tortilla chips. I always top with sour cream and shredded cheese.

Apples and sausage

Take of the casings and crumble and brown some Italian sausage, add in chopped Granny Smith apples and onions and fry together until soft (apples) and crispy (sausage).

Serve with something green (frozen peas, Caesar salad from a bag) and whole grain bread.

Salsa chicken. Boneless skinless chicken breasts, jar of salsa, slow cooker. Could not be easier and my whole family will eat it. Leftovers reheat well. Can put it on lettuce, use in quesadilla or taco, use to make nachos.

Baked potatoes are always a crowd please too.

1 pork tenderloin cut into chunks
1 can of diced tomatoes (seasoned are OK)
Some amount of BBQ sauce

Fork shred when ready. Add more BBQ sauce if needed.

Serve with cole slaw and rolls.

I’m back to work for the first time in 7 years. We’ve been eating a ton of Costco meals and Trader Joe’s stuff but it’s time for FOOD.


I need quick, easy, warm, delicious family meals either for crockpot or under 30 minutes (or one hour but not hands on).
