Some good suggestions here! I love beans once the weather turns cooler. Serious eats's vegan bean chili is excellent and makes a huge amount so you can freeze it for later. I love Indian bean dishes like chana, rajma , dal makhani but also the South Indian coconut-based curries. Heidi Swanson's website, Ottolenghi books have good bean recipes and Joe Yonan has a great book called Cool Beans with tons of good ideas.

I think it was a NYTimes recipe... cook some tomato paste in a skillet, mix in white beans (already cooked), cover in cheese, finish under broiler and eat with nice crusty bread.

For quick and easy, I love Progresso’s Lentil with Roasted Vegetables soup served over brown rice. It’s so comforting and hearty, especially on bleak, blustery winter days.
