Check out Kate DiCamillo -- lots of good options and I found many of them pleasurable to read as an adult too. Also lots of female protagonists which is great for girls.

If she's into Dragons, My Father's Dragon is a classic and a quick read. Also the language is basic enough that you could take turns reading it if she is ready to read at the sentence or paragraph level.

DH is currently reading her My Side of the Mountain and she's enjoying it.
