I also like to make baked spaghetti with spaghetti squash and home made tomato sauce with extra veggies.

To me, the thing that I'm not willing to give up in a casserole is cheesiness, so I try to include a lot of veggies, and not used a lot of processed ingredients other than the cheese.

But I use real butter, and milk, and since we are clearly not vegan I put really sharp cheddar cheese on the top. Which might or might not make it less healthy according to your definition.

Casseroles are a ton of work. Easier to plop meat on a grill or in the oven, heat up frozen veggies in a pan, and microwave frozen rice.

I agree with this answer — happy to provide recipes, but I need more info on OP’s definition of a casserole and what she wants out of a healthy meal.

I make lots of casseroles that are not particularly healthy but do not contain processed food. Instead of the cream of whatever soup make white sauce with butter, flour, milk and chicken bouillon or whatever broth you want for flavoring.

I guess healthy is relative but I make a bison tater tot hot dish that’s pretty tasty!

Brown a pound of ground bison

Add a bunch of peas, carrots, and chopped onion

Add a can if cream of chicken soup

Top with Tator tots and bake

I guess it’s not the healthiest thing in the world but gets my kids to eat a ton of veggies

Casserole just means any food in which several items are mixed and baked (or slow cooked) together. That is the definition.

This can include:
baked ziti
eggplant parm
any mix of veg and protein plus something like salsa
beef and potatoes and carrots in a thickened broth


It almost always includes dairy, but that doesn't have to translate into a canned soup.

Yes, a lot of casseroles are high in processed cream soups, cheeses, and butter.

Chicken + golden mushroom soup (and sour cream) + veggies and baked for 30 mi is unhealthy? Does that not count as a casserole?

Maybe you're looking at the wrong type of casseroles.

I want to prepare casseroles but therecioes I find are unhealthy full of processed foods and heavy cheese. Are casseroles and healthy an oxymoron? I’d sure love casserole style healthy dishes to make. Please share your ideas.
