I did this more when my kid was small. I'd try to get a couple of meals prepped during weekend nap times.

This is a great time of year to get started with this because you can do some long slow braise dishes on weekend afternoons/in the evenings after dinner. Don't forget to make double the recipe -- it usually doesn't take much longer, but you can freeze a whole extra portion and eat it for a quick meal later on.

I recommend a one-pot meal that will reheat easily (i.e. without having to do separate main/sides.

Recipe ideas:
Beef stew with potatoes
Any kind of pasta casserole
Soups of all kinds
Chili
Pot pies (here you can make double filling and freeze the filling for the second; top with pastry from the freezer to serve)

I just borrowed the America's Test Kitchen meal prep book from the library, it has a weekly menu plan for about half a year. It's well laid outand organized with a grocery and to-do list for eqch section, I was going to test out a couple of plans soon. Their recipes are usually very reliable.
