Marinade of buttermilk, salt, garlic, rosemary, paprika (or red chilly flakes if you like heat), lemon. Dunk in cornish hens - I am fine with serving 1 cornish hen per person. Marinate for 3 hours in fridge. Next day, put it in oven and in 30 minutes you will have the juiciest, insanely beautiful looking hens!
Serve with slices of lemon, and mushroom risotto. Fabulous.
This is really an absolutely decadant, easy, recipe. It comes out looking as if you have slaved for hours. ANd it is melt in your mouth delicious.
Here is a tip. This is the very best recipe to serve for TG and Xmas.

Roast chicken, roast veg, mashed potatoes. For people I know who like food I attempt Indian type dishes and that usually goes over well. (unless they're Indian, then I don't dare). Sometimes falafel/Mediterranean type spread.
When I make mashed potatoes, I put small bits of bacon in them.

I put vegetables in the packet too (lately zucchini, summer squash, asparagus, cherry tomatoes) but can be whatever you want. Add some white wine, seal, and pop it in the oven for 20ish minutes. I serve with rice or couscous.
This sounds great. Where do you buy your sea bass? I've heard Costco's is good, but mine doesn't carry it.
