My DD finished her undergraduate degree in 3.5 years at a small college in SC and then got a Masters in Accounting. Is making good $$ at a large accounting firm and is studying for the CPA exam.

Parents are so afraid of kid's failure to launch that they forget that college is an organic path of personal and professional exploration and growth, not of going straight on a highway from point A to point B.

She should study whatever she wants, do extracurriculars she wants, get internships she can, communicate with her professors/academic advisors/career counseling office to find or carve her path. If she is passionate and knowledgeable about what she studies, she'll be successful in her career. Her success will be different from your vision but will make her happy and you proud.

I’m not sure why this is nuts. Do your adult children have jobs? I am in IT project management and my spouse is a teacher. Our experience is limited. My job didn’t exist when I was growing up. I’m wondering what adult children out of college are doing.
Healthcare clinical jobs. Is that like insurance administration and scheduling?

Oldest graduated college six years ago. Narrowed down passions/interests while in university through classes and internships that moved her into job at graduation.
That being said, along with approaching university as an exploration there are also incredible gap programs that can help think about where to head career wise. For my second, her gap year was an integral part of her success at university (which my bank account liked).
