Many years ago we were supposed to go to St. Lucia for Thanksgiving in a hurricane hit, so we got rerouted to Central America.
OP here - we're not huge drinkers, but I do know that food and activities can add up at resorts. That's why I mentioned all inclusives. I"m open to other resorts that have other activities, and a kid's club would be nice but not required as we'll have a couple teens with us if we need an occasional babysitter.
