Yes, I would keep the light grey up the stairs and into the hall/loft area and then change it up in the other rooms if desired.
This. If you change the upstairs color slightly, no one will notice - it will just look like different lighting. Have a main color for your hallways and switch up the rooms.

Don't overthink it. Just have the stairways complement both ends.

i think all the areas that are open to each other should be the same color. bedrooms, bathrooms etc can be other colors.
for instance, in our prior house the entry way, stairs, game room and needed to be the same color. there were no natural places to change colors in those areas. game room had a metal accent wall. there were openings to the dining room and family room, so those were another color.
you can also have accent walls, but i know some people don't approve of accent walls.
