You could make chili Mac: onions/garlic/bell paper chopped and sautéed in oil, add beans and canned tomato sauce. Simmer for 30 min. Serve over pasta and a sprinkle of shredded cheese on top.

Not OP, but I'm in a rut and trying this tonight

A little sugar or honey in the sauce too if needed

Was just about to say make sure to add some sweetness to the sauce — brown sugar is good if you don’t have palm sugar.

We did the noodle dish.

But I need more vegetarian ideas! I'm getting tired of the meat thawing hamster wheel, and eating chicken cooked 3 ways, steak, or burgers.

I'd make a quick pasta sauce with the onions, garlic, tomato paste, tomatoes, olive oil and black pepper. Serve with any pasta and top with grated parmesan and fresh parsley.

Then put frozen broccoli and sliced fresh red peppers into a roasting tin. Coat with oil and season. Cook at 400F in oven until done.

Cook fresh garlic briefly in microwave. Mix with butter and herbs to make a quick garlic butter. Slice baguette (not all the way through), spread on garlic butter, wrap in foil and put in oven to cook with the roasted veg.

(Add the basil to the mozzarella and tomatoes.)
