Boxed tofu typically has a very different texture (silken but sort of more gelatin vibe too?) and there is a slightly different flavor. Bamboo shoots is a pretty good descriptor.

My kids eat plain cold tofu all the time and won’t touch the boxed stuff in any circumstances so it’s definitely a pretty different taste and texture

I am not a huge tofu fan however the boxed stuff is good baked. The NYT has some great recipes using it.

But it can have a sour taste not usually smell.

I would throw it out.

Boxed tofu is super weird stuff, it’s probably fine but just toss it. Don’t feel compelled to eat.

If it smells bad don’t eat it. However I often boil or microwave firm tofu before using for a couple min

I don’t buy boxed tofu but if it smells or tastes off, throw it.

Does boxed tofu normally taste and smell different than regular fresh tofu? I usually buy fresh tofu but I got some boxed tofu during COVID to have on hand. Now I need to eat them or throw them out. It has a weirdly sour smell and taste, -- not like tofu that's gone bad, which is nasty; it's more like canned bamboo shoots.

I know it has different ingredients -- GLUCONO-DELTA-LACTONE, whatever that is -- so is that part of the sourness or has this just gone bad? I have no reference.
