Seriously, I’d recommend toddler foods which tend to be soft, or even baby food purees.
You might also look at nutritional and/or diet shakes like Ensure or Slim Fast, but they might have a lot of sugar.
Refried beans would be soft, but beans have natural sugar, so I don’t know if that would be okay. Hummus might also be an option.
If you can do soft fish, what about chicken/tuna salad?
