Eggplant parmesean. I just use Raos sauce, probably 7-10 cans, in a huge disposable tray, and put slices of mozzarella on top.

tamales, empanadas, chicken soup (I leave out the noodles and cook them separately before serving the soup), waffles.

I’m doing the same next week! In addition to lemon blueberry muffins, I will do spaghetti sauce, pesto, breakfast sandwiches and meatballs.
I’m looking for inspiration too!

I feel like chicken thigh meat freezes better than breast meat-maybe it is the fat content. I cook, cube and freeze thigh meat for various uses. I also make a couple of chicken thigh dishes—always including curried chicken thighs, which is a big hit and freezes well. I also freeze a double batch of blueberry muffins—I use Ina Garten’s recipe. I used to make and freeze waffles, pancakes and breakfast burritos but got lazy and started buying frozen ones. Homemade were so much better.

Cook off extra burgers on the grill (hotdogs too). Wrap individually and place in a freezer bag with equal amount of buns.

spaghetti sauce, meatballs, meatloaf, red beans (if you like that).

having meat done for different things can allow you to buy meat on sale and have the toughest part done. if you have a smoker, you can smoke a lot of meat to freeze.

use cooked hamburger meat for tacos, hamburger casserole, easy korean beef etc.

cooked and cleaned chicken for all kinds of casseroles.

In preparation for the crazy fall we are about to have in my household, I want to make some freezer meals next week. Thinking of chili, meatballs, and a lasagna.
